The fact is that "correct" truffles are prepared from a mixture of chocolate, cream, egg yolks and butter, and therefore their shelf life is very short and the transportation conditions are unusually strict. But the most important "truffle" secret is that there is nothing easier and more interesting than making these sweets yourself.

It is necessary

    • 3 ½ tablespoons butter (82% fat)
    • 2 egg yolks
    • 1/4 cup sugar
    • 1/3 cup high fat cream
    • 360 grams of good dark chocolate
    • Cocoa powder

Instructions

Step 1

Remove the oil in advance and wait until it becomes soft, like for a cream.

Step 2

Whisk butter, egg yolk and sugar together.

Step 3

Break the chocolate into small pieces and add it to the butter and egg mixture.

Step 4

Heat the cream in a water bath.

Step 5

Add the chocolate mixed with the butter and egg mixture. Stirring constantly, wait until all the chocolate has melted and the mixture becomes glossy, homogeneous.

Step 6

Chill the chocolate mixture, called ganache, and put it in the refrigerator for a few hours.

Prepare a bowl of cocoa powder and a chilled bead set.

Step 7

Take out the ganache, make small balls and quickly coat them in the powder. If the ganache becomes too soft and sticky, return it to the refrigerator for 15-20 minutes. To avoid this, it is better to place the bowl of chocolate in a container with ice in advance.

Some pastry chefs insist that when making truffles, you can only roll them with your fingers. So that the surface of the candy is as uneven as that of the truffle mushroom.

Store truffles in an airtight container in the refrigerator for up to 1 week.

If you do not need to make classic truffles, if you are ready to experiment, then you can safely refuse egg yolks, and replace the cream with the same volume of almost any liquid - milk, water, fruit puree, tea, coffee or alcohol. Note that alcohol evaporates when heated, and if you want to preserve the "degree", and not just the aroma, then alcoholic drinks need to be added to the ganache after you remove it from the stove, but before you put it in the refrigerator.

You can flavor truffles not only with liqueur, but also add pepper, mint, sea salt to them, whatever you find appropriate and interesting. It is also not necessary to stick to cocoa in order to roll a truffle. Cinnamon, powdered sugar, coconut flakes, nut crumbs will do.
