It is necessary

  • - 225 g of dark, milk or white chocolate;
  • - 2 egg yolks;
  • - 25 g unsalted butter;
  • - 1 tablespoon of heavy cream;
  • - 2 tablespoons of brandy, rum or liquor;
  • - 50 g of ground almonds;
  • - 50 g coconut flakes;
  • - 2 tablespoons of cocoa powder;
  • - 2 tablespoons of chocolate "vermicelli".

Instructions

Step 1

To make truffles, you need high quality chocolate in chunks or bars. Avoid palm oil sweets or filled chocolates.

Step 2

Break the chocolate into pieces, place in a bowl and place it in a saucepan of boiling water. Melting in a water bath will prevent the chocolate from burning. Bring it to a liquid state and remove from heat. Add ground almonds, butter, cream and rum or brandy to a bowl and mix well.

Step 3

Leave the mixture to cool - it will take about half an hour. Gather the chocolate mass with a teaspoon and roll it into balls. Pour coconut flakes, chocolate noodles and cocoa powder into flat saucers. Dip each ball in one of the sprinkles and place on a greased plate. Refrigerate truffles to solidify.

You can make chocolate-coated truffles. To do this, melt the chocolate in a water bath and dip the balls into it, pinning them onto a fork. Let the glaze drain, and place the truffles on a plate so that they do not touch each other. Place the candies in the cold to set. If you have made white chocolate truffles, dip the candies in fine powdered sugar after dipping them in the icing.

Another option is filled truffles. Place a whole hazelnut or tincture cherry in the middle of each candy. It is better to flavor such truffles with the appropriate alcohol - nut or cherry liqueur.

Put the congealed candies in corrugated paper tins. Serve them on a platter or place them in a gift box. Truffles can be prepared for future use and stored in a cool place wrapped in wax paper.
