We put water on fire, add sugar to it and cook for 2-3 minutes. Then melt the butter in the syrup. Add cocoa powder, bring the mixture to a boil. Then gradually add powdered milk (or infant formula), stirring thoroughly. You should get a thick mass. Let it cool down to 35-40 degrees. Then, wetting our hands with cold water, roll balls from the mass and roll them in cocoa. Put the truffles in the refrigerator for 1 hour. You can also first cool the entire mass completely, and then shape the balls.

The second method is the classic one used in professional French cooking. But, despite such seriousness, truffles are prepared very simply. It is necessary to choose high-quality dark chocolate (from 65%) and heavy cream. The butter must be softened beforehand.

Break the chocolate into small pieces and melt in a water bath, stirring constantly. Heat the cream until light steam. Mix with chocolate (using a mixer will work faster). Remove the mixture from heat and let it cool to 35 degrees. Add cognac. If you are preparing truffles for children, then you do not need to add it. Cut the butter into small pieces, pour into the mixture and grind until smooth. We put the mixture in the refrigerator for several hours, after which we take out and sculpt the balls. Next, they need to be dipped in melted chocolate and rolled in cocoa powder, and then briefly placed in the refrigerator.

The third way is simplified and therefore the fastest. Beat the softened butter with a mixer. Then, continuing to beat, add the icing sugar and cocoa powder. You should get a homogeneous thick mass. We cool it in the refrigerator, and then we sculpt balls and roll them in cocoa powder or other sprinkles. Put the finished truffles in the refrigerator for 1 hour.
