Quick khachapuri in a pan: cooking features
Khachapuri - hearty cakes with cheese and herbs, made from unleavened, puff, yeast dough. There are dozens of variations, named after the locality of the recipe. Usually khachapuri is baked in the oven, but at home they often cook a quick or lazy option in a pan. The essence of the recipe is the combination of all components and quick frying of the cake on both sides.
In Georgia, traditional pastries are made on the basis of yogurt. It is not easy to get this fermented milk product in Russia, but it is quite possible to replace it with kefir, yogurt, sour cream. Those who do not like to mess with the dough should try khachapuri made from ready-made thin pita bread.
The second important ingredient is cheese. At home, suluguni, feta cheese or cottage cheese are widely used, but hard varieties are also suitable. Cheese must be supplemented with herbs, fresh or dry. You can also experiment with spices, trying ready-made mixtures or adding individual spices to taste.
Lazy khachapuri with cheese: a classic recipe
An important condition is not to skimp on the filling and spice it up with herbs: cilantro, parsley, thyme, and basil. It is the aromatic herbs that will give the cheese cakes a recognizable Caucasian flavor. The proportions of spices can be changed to taste. From the specified number of products, 2 large khachapuri will be obtained.
Ingredients:
- 1, 5 glasses of low-fat kefir;
- 2 eggs;
- 100 g of cottage cheese;
- 150 g of any hard cheese;
- 100 g wheat flour;
- 0.5 tsp salt;
- ground black pepper;
- spices to taste;
- a bunch of fresh herbs (parsley, cilantro, dill, purslane, wild garlic);
- odorless vegetable oil.
Sort the greens, wash, dry and finely chop. Pour kefir into a deep bowl, add chopped herbs and eggs. Grate the cheese on a coarse grater, add to the total mass. Put the cottage cheese there. To make the khachapuri juicy and rich in taste, it is better to use homemade cottage cheese, fresh and without hard lumps. A low-fat product will not work, the cake will turn out to be dryish.
Pour spices into the dough. Their choice depends on personal taste preferences. Usually they use a set of dry herbs, paprika, caraway seeds, coriander in any proportions. Freshly ground black pepper does not hurt either. Mix the mass with a wooden spatula until smooth, add sifted wheat flour in portions. The dough should be thin enough, but not watery.
Grease a thick-walled pan with high sides with vegetable oil. Pour the mixture onto a heated surface with a small ladle, spreading it evenly over the pan. Fry the product over low heat for about 5 minutes.

Cheese cakes with feta cheese contain fewer calories, a salty, low-fat product goes well with spicy herbs and fresh thin dough. Khachapuri can be made in portions, reminiscent of pancakes.
Ingredients:
- 1 glass of kefir or yogurt;
- 2 tbsp. l. thick sour cream;
- 200 g feta cheese;
- 1 egg;
- 1 cup wheat flour
- salt;
- ground black pepper;
- vegetable oil for frying;
- greens (parsley, cilantro, dill).
Grate cheese or finely chop with a sharp knife. Wash greens, dry, chop. In a deep bowl, mix kefir with sour cream, egg, salt and pepper. Add sifted flour in portions, grind thoroughly so that there are no lumps in the dough. Add cheese and herbs, mix again.
Heat some vegetable oil in a frying pan, pour the dough with a ladle, forming round small cakes. Fry on both sides until golden brown. Be sure to check if the dough is baked inside by piercing the khachapuri with a toothpick or fork. Place the items on a paper towel to absorb excess oil. Serve on warmed plates garnished with fresh herbs.
Lavash khachapuri: step by step instructions
A delicious hot snack can be made in a quarter of an hour without even kneading the dough. Instead, they use ready-made Armenian lavash. Thin sheets are quickly soaked with a moist filling, khachapuri are tender and very tasty.
Ingredients:
- 200 g of thin pita bread;
- 2 eggs;
- 150 g of homemade cottage cheese;
- 150 g suluguni;
- 1 tsp vegetable oil;
- any fresh herbs;
- freshly ground black pepper.
Grate suluguni cheese and mix with cottage cheese. Add finely chopped herbs and egg, mix well. It is not necessary to salt the filling, add black pepper if desired.
Cut thin pita bread into squares with sides of 15 cm or a little more. Lay them out on the board, distribute the filling in an even layer. Fold pieces of pita bread in the form of envelopes. Beat the egg and coat the khachapuri blanks.
