Cooking this dish is not at all difficult, and the process will not take much time. It will surprise you with a combination of crispy fried crust, tender dough and cheese aroma.
Ingredients:
- Milk - 300 g;
- Flour - 350 g;
- Chicken egg - 2 pcs;
- Sweet cream butter - 50 g;
- Apple or grape vinegar - 4 g;
- Mineral water (carbonated) - 125 g;
- Sweet cream butter - 80 g;
- Finely ground salt, iodized - 3 g;
- Suluguni cheese or well-salted homemade cottage cheese - 150 g.
Preparation:
- Break the chicken eggs into a glass bowl. Beat them with a whisk or mixer. You should get a yellowish egg mass.
- Pour milk to the beaten eggs (always warm, but not hot). Continue to beat with a mixer.
- Add, pouring in a thin stream and sifting through a strainer, fine wheat flour into the whipped mixture of milk and eggs. This must be done so that the dough is homogeneous, tender and airy, without lumps and saturated with oxygen.
- Stir the dough with a blender.
- Pour in mineral sparkling water and continue to beat with a blender.
- Grate cheese like "Suluguni" or well-salted homemade cottage cheese on a grater with large holes and add it to the dough. Knead the dough again with a blender.
- Melt the sweet butter in a large-diameter frying pan with high sides (preferably with a non-stick coating).
- When the butter is completely melted, pour the cooked dough into a hot skillet. Using a spatula, spread it in an even layer in a frying pan. Fry for 12 minutes over medium heat.
- Gently, using two spatulas (preferably wide), turn the cake over. And fry for another 12 minutes.
- Transfer the finished pie to a dish of a suitable size, cut and eat hot.
