Step 1

You can use homemade or purchased whey to make tortilla dough. Warm kefir or whey to room temperature. Add salt and sugar to it. Dissolve the ingredients well in the liquid.

Wash the eggs, break into a bowl, beat with a whisk. Combine with kefir mass, stirring. If you have a shaker, beat the eggs in it.

Sift flour, add baking powder to it. Knead the dough in a bowl of kefir. Knead several times, with a rest break for the test. When leaving the dough, remember to cover it with a towel to prevent it from drying out.

Wash the spinach, dry and chop. Substitute other greens for the spinach if desired. The true recipe for making khachapuri involves tearing the cheese for the filling with your hands.
