Ajapsandali is an incredibly tasty and aromatic Georgian dish. Preparing it yourself is quite simple. If you do not like food that is too spicy, then just put less hot pepper.

It is necessary

  • • 3 medium sized eggplants;
  • • 2 sweet peppers;
  • • 3 potato tubers;
  • • a small bunch of greens of basil and cilantro;
  • • half of hot pepper;
  • • ½ teaspoon each of dry oregano and sweet paprika;
  • • 4 ripe tomatoes;
  • • 1 onion head;
  • • 2 garlic cloves;
  • • 2 teaspoons of salt.

Instructions

Step 1

Well washed eggplants should be cut into small cubes. Place them in a deep cup and pour in the water mixed with salt. After a third of an hour, the liquid must be drained, and the vegetables must be thoroughly washed using running water.

Step 2

Peel the potato tubers, rinse and cut into small cubes.

Step 3

Pour oil into a preheated skillet. Then pour the potatoes there and add hot pepper. You need to cook with regular stirring for about 5 minutes. After that, pour the eggplants into the pan. Mix everything well and cook the vegetables for another 7 minutes.

Step 4

Rinse the greens thoroughly, let the water drain and chop finely. Remove the husks from the garlic cloves and wash them. Garlic can be chopped with a garlic press or finely chopped.

Step 5

Pour the contents of the pan into a large saucepan and add the garlic cloves and chopped herbs to the same.

Step 6

Cut the peeled and washed onion into very small cubes. Wash the sweet pepper, remove the stalk with the testis from it and cut into small pieces.

Step 7

Fry the peppers and onions in a skillet. Remove the skin from the tomatoes by scalding them with boiling water, and then cut into small pieces. Add the tomatoes to the skillet and cook the vegetables for another 3 minutes.

Step 8

Put the contents of the pan in a saucepan with the rest of the vegetables. Mix everything thoroughly, add salt, spices, pepper. Cover with a lid. The dish should be infused for 5-10 minutes. After that, it can be laid out on plates.
