Curd cheese cakes, or in other words, curds are a traditional Russian dish that has been prepared for many decades without losing significant changes in the recipe. They are small cottage cheese pancakes with various fillings (raisins, berries, apples). The cheese pancakes prepared according to this recipe are very tender, airy, fragrant and unusually tasty.

- 500 gr. cottage cheese,
- 4-5 st. l. flour,
- 2 eggs,
- 4 tbsp. l. granulated sugar (can be replaced with brown sugar),
- salt,
- vegetable oil,
- vanilla sugar,
- baking powder,
- powdered sugar,
- semolina (or bread crumbs),
- 50-70 gr. dried cherries or raisins.
Instructions
Step 1
Before preparing cheesecakes, you must first wipe the cottage cheese through a fine sieve.
Step 2
Drive 2 eggs into the curd, add sugar, vanilla sugar and a little salt, mix everything thoroughly.
Step 3
Add a little baking powder (slightly less than ½ tsp) to the resulting mass and mix again.
Step 4
Sift flour twice over the table. Gradually add flour to the curd and knead well. At the end, add dried cherries or raisins and mix thoroughly again. The dough should be a little sticky.
Step 5
Gently form balls of the prepared dough and press a little to make a small flat cake 1-1.5 cm thick. Dip each cheesecake in semolina or bread crumbs.
Step 6
Fry curd cakes on both sides in a preheated pan with vegetable oil until golden brown.
Step 7
Put the prepared cheesecakes on a paper towel in order to remove excess oil. Sprinkle with icing sugar on top. Serve hot cheesecakes with tea, coffee and milk. Serve separately the sour cream mixed with sugar.
