Cooking fish cutlets, at first glance, seems to be a very difficult and time-consuming task. But in fact, preparing this fish dish at home can be simple and delicious. There are many different recipes, simple culinary techniques that help to achieve an appetizing result.

Step 1
You can choose almost any fish for making cutlets. Buy ready-made fish fillets from the store. If you do not have a fillet, but a whole fish, prepare a fish fillet from it. To do this, cut off the fish's head, fins and tail, clean it from the scales, take out the insides. Make an incision along the back and divide the carcass in half. Remove the backbone and bones from the carcass. Removing all the seeds is very important, it depends on whether they get into the minced meat and cutlets, respectively.

Chop the cooked fish fillets. You can use a kitchen knife and blender or a coarse grinder. To preserve the taste of fish when frying the cutlets and do not fall apart, do not make the pieces too small.

Unlike minced meat, minced fish comes out more liquid. Squeeze the minced meat to remove excess liquid. For the same purpose, when chopping fillets with a knife, add a little breadcrumbs, and when chopping with a meat grinder or blender, add a white roll soaked in milk in advance.

Add all other ingredients, spices and salt to the minced meat. For tenderness, it is best to use semolina instead of flour. Add peeled and finely chopped onions for juiciness. The drier the fish, the more onions you need. Let the minced meat steep for half an hour.

Form the cutlets with your hands moistened with water. To add juiciness to the cutlets when frying, place a small piece of butter in the middle of each cutlet. For breading, use either bread crumbs or semolina. Leave the cutlets to "rest".
Step 6
Pour any vegetable oil into the pan and heat it up. Dip the patties in the breadcrumbs again until crisp and place in the skillet.
Step 7
Because fish cooks quickly, consider the cutlets as cooked as soon as they are browned on both sides. Serve the cutlets with any side dish - they go well with both rice and pasta, potatoes and vegetables.
