It is not so easy to buy good wine; fakes with chemical additives are more common in retail outlets. But you can make a wonderful homemade wine with a harmonious taste. Any berries and fruits will do, you can use substandard ones.

The wine created by oneself has an indisputable dignity, it is natural. There are many recipes for homemade intoxicating drinks, delicious wine is made from red currants.

To pick a ripe berry, by the way, you can not rush to pick it, the currant does not crumble from the bushes for a long time. Berries do not need to be washed, so it is better not to take contaminated berries from the lower branches. Pour the currants into an enamel container, mash with a crush and leave for 72 hours to ferment. Once or twice a day, you need to stir the berry so that it does not become moldy.

Then pour boiled chilled water into the currants. Stir everything and strain through a metal sieve. Pour the pulp again with water, stir again and strain. Combine both parts of the wort. The ratio of berries and water is 1: 2.

For 1 liter of the resulting wort, take 400 g of sugar, for making light dry wine, reduce the amount of sugar by half. Stir everything and pour into glass containers (bottles or jars), close with a water seal. Place in a warm, dark place, such as a closet.

A little secret: you can do without a water seal, just make a small hole in the nylon cover with an awl. The gas formed during fermentation will escape under pressure, but the air will not penetrate through the small hole at all.

The wine should ferment for 1, 5-2 months. The end of fermentation can be determined by exposing the jar to light. If the luminous bubbles do not play in the wine, and the remnants of the pulp have settled to the bottom, then the fermentation process is over. Carefully drain the wine through a straw, being careful not to shake up the sediment.

Add sugar to the wine, 100 g for each liter, pour into bottles, seal tightly and let stand for 1-1.5 months. Natural delicious wine is ready, you can make fortified from it, for this you need to add 100 ml of vodka per liter of wine, this wine is stored for years.

Note: according to this recipe, you can make wine from absolutely any berry.
