It is necessary

    • • Flour - 1 kg

    • • Vegetable oil - 1 glass;
    • • Warm water - 2 glasses;
    • • Salt - 1 teaspoon.
    • • Yeast - 50 g;
    • For filling:
    • • Buckwheat groats - 500 g;
    • • Dried mushrooms - 50 g;
    • • Onions - 3 heads;
    • • Salt to taste.
    • For frying:
    • • Vegetable oil - 100 ml.
    • To lubricate the cake:
    • • before baking –2 tablespoons of strong tea;
    • • after baking - 2 tablespoons of vegetable oil.

Instructions

Step 1

Dissolve yeast in 0.5 cups of warm water. Knead the lean yeast dough, cover it with a napkin or towel and place in a warm place to ferment well. With good yeast, this process is very intensive, and therefore make sure that the dough does not run away. During fermentation, it is necessary to knead it at least twice.

Step 2

After the dough has risen, divide it in two. Roll out a layer about 1 cm thick from one part, transfer it to a baking sheet, previously oiled. Lay the layer, level it and crush it with your hands so that the whole baking sheet and its edges are covered with the dough.

In order to prepare the filling, you need to sort out the buckwheat, dry it a little in a pan, pour it into a clay pot, pour boiling water, and put it in the oven, covered with a lid. Bake such porridge until tender (15-20 minutes).

Step 4

Soak dry mushrooms in cold water for 2 to 4 hours, then boil them in the same water until tender (that is, until they sink to the bottom). Pour boiled mushrooms into a colander and rinse thoroughly under running water. Next, you need to cut them into strips and fry them in vegetable oil.

The next step is to fry the chopped onion until golden brown.

Step 5

Mix the finished ingredients, add mushroom broth strained through cheesecloth for juiciness and spread in an even layer on a baking sheet covered with a layer of dough.

Step 6

Roll out the second piece of dough thinner - a little less than a centimeter. Cover the workpiece laid out on a baking sheet and filled with filling with it, carefully pin the seam and bend it to the bottom.

Step 7

Pierce the pie with a fork in several places so that steam is released into the baking, and finally, brush the finished product with strong tea.

Step 8

Bake the pie until tender in the oven at 180 degrees. After the cake is baked, brush it with vegetable oil!
