A raw food diet is a food system that excludes heat processing of products. Lean cuisine for raw foodists: soup without cooking

Moving to a raw food diet doesn't mean you have to eat unprocessed foods or just salads. There are many recipes for raw foodists to help you create a complete meal. For example, you can substitute cold pumpkin and lentil soup for a hot meal. For him you will need the following products:

- germinated red lentils (2 handfuls);

- cilantro (1 bunch);

- pumpkin (0.5 kg);

- curry seasoning.

Choose a young melon crop with orange pulp, weighing no more than 5-7 kg - such a pumpkin contains the most fructose and carotene. Peel the crusts and cores, cut the pulp into slices and squeeze the juice with a juicer. Add lentils, half a bunch of cilantro, curry to taste and blend in a blender until smooth. Pour the soup into a bowl and garnish with the leftover cilantro with chopped herbs.

Many raw food dishes have come to Russia from Indian cuisine, which is famous for its hot spices. Optionally, you can substitute light spices, such as cinnamon instead of curry.

Pkhali from beet tops

Usually the famous Georgian snack - pkhali - is made on the basis of boiled spinach, beets or ekala (a thorny herb with edible juicy shoots). In a recipe for a raw food kitchen, you can use beet tops and omit the heat treatment of the food. For this dish, take:

- walnuts (1 glass);

- chopped beet tops (5 glasses);

- cilantro (1 bunch);

- garlic (1 clove);

- table salt to taste;

- freshly squeezed lemon juice (2 tablespoons).

Grind the walnut kernels in a food processor, then scroll together with chopped cilantro, beet tops (only green parts!), Crushed garlic. Salt the resulting puree to taste and season with freshly squeezed lemon juice. If desired, it can be replaced with sour wine or a little wine vinegar. Grind all the phali ingredients again until the mixture resembles a pate. Shape into balls, place on a serving platter and garnish with pomegranate seeds. Serve with slices of raw vegetables - bell peppers, cucumbers, tomatoes, purple onions.

Doctors do not recommend a constant raw food diet, as it is fraught with serious digestive upset, lack of proteins and minerals. However, temporary raw food fasts can help flush out toxins and lose weight.

Raw food almond ice cream

A light dessert made from raw fruits and nuts will bring a pleasant variety to the lean raw food menu. To make ice cream you need:

- ripe kiwi (4 fruits);

- bananas (7 pcs.);

- cocoa powder (25 g);

- almonds (1 handful).

Peel the fruit, cut the kiwi into thin semicircles and place in the bowls. Scroll the first half of the bananas in the mashed potatoes with a blender and place in portions on top of the kiwi. Don't mix layers of fruit! Mix the remaining bananas with cocoa powder to make a smooth homogeneous mass, then put it in the top layer in the bowls. Grind the almonds in a mill and garnish the ice cream with nut crumbs. Keep the treat in frost until thickened for about 1-1.5 hours.
