Maslenitsa is followed by the time of Great Lent - the longest and strictest Orthodox fast of the year. When composing a lean menu, it is recommended to give preference not only to hearty, but also to varied and healthy dishes that provide the body with all the necessary substances.
Lenten Recipes: Honey Pear Pie
On the days of Lent, when any animal products are excluded from the diet, you can bake a fragrant cake in vegetable oil without eggs.
Required Ingredients:
- 4 pears;
- 200 g of granulated sugar;
- 100 g of shelled walnuts;
- 200 ml of water;
- 150 g of vegetable oil;
- 50 g of honey;
- 5 g of citric acid;
- 5 g of baking soda;
- 400 g of wheat flour;
- ground cinnamon - to taste.
Cooking method:
Pour granulated sugar into a bowl and cover with boiled water. Then add vegetable oil and honey. Mix well - honey and sugar should dissolve. Add soda, a pinch of ground cinnamon, citric acid and peeled walnuts to the resulting mixture, after grinding them in a coffee grinder. While stirring, add flour - the consistency of the dough will turn out like thick sour cream.
Regular consumption of cinnamon with honey helps to strengthen the immune system.
Peel the pears, core and cut into cubes.
It is better to choose pears for the pie that are strong, not overripe, otherwise they will give a lot of juice and the dough will not bake.
Stir the pears into the dough. Grease a baking dish with vegetable oil and lay out the dough. Preheat the oven to 200C and place the pie in it for 30 minutes. Cool the finished cake and sprinkle with powdered sugar on top.
Lean Recipes: Red Bean Salad with Cucumbers
Required Ingredients:
- 300 g of red beans;
- 50 g green onions;
- 50 g of vegetable oil;
- 1 onion;
- 1 tbsp. a spoonful of wheat flour;
- 1 tbsp. a spoonful of vinegar;
- 3-4 cloves of garlic;
- 1 tbsp. a spoonful of parsley;
- 1 tbsp. a spoonful of dill greens;
- 2 fresh or pickled cucumbers;
- ground red pepper;
- salt.
Cooking method:
Sort the beans, rinse, soak for 6-8 hours in cold water and rinse again. Then boil until soft, cool and drain.
Red bean dishes are especially popular in Georgian, Armenian, Azerbaijani and Latin American cuisines.
Heat vegetable oil in a frying pan and fry finely diced onion in it. Peel the cucumbers and also cut into cubes. Finely chop the thoroughly washed greens. Transfer the beans to a large bowl, add the fried onions (along with the oil), cucumbers, herbs, crushed garlic and vinegar. Season with salt, pepper and stir. Red bean salad can also be served as a separate dish.
