The transition to such lean dishes does not mean at all that the festive table for people who refused meat is meager, and the food is not tasty. In proof of this, below will be presented delicious and interesting recipes without the use of meat.

Rice balls

For cooking you will need:

- rice - 150 g;

- bow - 1 head;

- carrots - 1 pc.;

- green peas (canned) - 2 tbsp. l.;

- some green beans and cabbage;

- spices to taste.

Pour the rice into a colander, rinse, and when the excess liquid drains, transfer to a bowl. Peel, chop and mix onion with rice. In a small saucepan, boil water, put the mixture of cereal and vegetable there, cook, stirring constantly, until the rice is cooked. Then put it in a colander.

Peel the carrots and ripen in small cubes, chop the cabbage. If you had frozen beans, boil them for 5 minutes in salted water, and then chop finely. Now combine all the ingredients together: rice with onions, cabbage, carrots and beans. Mix everything. From the resulting mass, mold small balls and put them on a dish. Sprinkle with herbs before serving. On the festive table, the food will look simple and beautiful.

Napoleon salad

Ingredients for the dish:

- pickled cucumbers, potatoes and eggs - 3 pcs.;

- beets and carrots - 1 pc.;

- garlic - 2 cloves;

- favorite greens - 1 bunch;

- salt and spices to taste;

- lean mayonnaise.

Boil, refrigerate, and peel eggs, potatoes, and beets. Cut these foods into small pieces of equal size. Grate the carrots on a coarse grater, add garlic, previously peeled and passed through a press, into it. Wash the greens, dry and chop finely. Chop the pickles into cubes.

Take a deep salad bowl and lay food in it in layers in the following sequence: potatoes - herbs - pickled cucumbers - beets - carrots with garlic - eggs. Flavor each layer with lean mayonnaise and, if desired, spices. It is recommended to remove the finished snack for several hours in a cool place for impregnation. Sprinkle the salad with herbs or decorate to your taste before serving.
