Light and healthy Italian creamy soup is very tender and velvety in consistency. The principle of making the soup is very simple and does not take much time.
It is necessary
- - 400 g pumpkin;
- - 200 g of potatoes;
- - 30 g leeks (onions);
- - 500 ml vegetable broth (water)
- - 2-3 tbsp. tablespoons of olive oil;
- - aromatic herbs (to taste);
- - 300 g of white bread;
- - 1-2 cloves of garlic;
- - 1 tbsp. a spoonful of greens;
Instructions
Step 1
Cut pumpkin, potatoes into cubes, onions - finely into rings.
Fry a little onion in a pan, add potatoes and pumpkin to it, continue frying for 5 minutes.
Step 2
Put the fried vegetables in the vegetable broth. Cook until tender. Gradually, the broth will be boiled down about twice.
Step 3
Grind the finished soup with a blender.
Step 4
To make croutons: cut the bread into cubes and fry in a skillet.
Serve the soup with croutons.
