  • For the test:
  • - warm water - 150 ml;
  • - yeast - 0.5 tsp;
  • - premium flour - 250 g;
  • - corn starch - 50 g;
  • - sugar - 1.5 tsp;
  • - salt - 0.5 tsp;
  • - soda - 0.2 tsp
  • For filling:
  • - white cabbage - 250 g;
  • - salt - to taste;
  • - minced pork - 150 g;
  • - half a head of onion;
  • - ground coriander, black pepper, soy sauce - to taste;
  • - rice vinegar - 0.25 tsp;
  • - garlic - 1 clove.

Instructions

Step 1

It is better to knead the dough in a food processor. Dissolve yeast with sugar in half of the water and let stand for about 15 minutes to activate. And at this time, sift flour with salt and starch into a bowl, in which we will stir the dough. Gradually start adding the water with yeast, starting to stir. Add the remaining water, knead the stiff dough, which should be kneaded at medium speed for 15 minutes or manually for half an hour. Then we tighten the bowl with cling film and put it in the refrigerator for 7-8 hours.

Step 2

Chop the cabbage, put in a bowl, knead well with a little salt. Add grated garlic, soy sauce, spices. Cut the onion into small cubes, fry until transparent, put the minced meat in the pan, fry until tender. Transfer to cabbage, stir and refrigerate for pickling.

Step 3

Take the dough out of the refrigerator: it should already fit. Let it warm up for 15 minutes, add soda and start kneading again. When the cut dough is completely homogeneous, it is ready. Divide it into pieces of about 50 g each, roll each into an oval, put the pickled filling in the center and pinch. Gently give a rounded shape by "pushing" the pies from the sides. We leave to come up for another 20 minutes.

Step 4

Put in a double boiler on a sheet of parchment and cook for 20 minutes. After that, let it stand for another 10 minutes, without opening the lid, so that the pies do not lose their shape. Done! Bon Appetit!
