The chocolate and strawberry curd cake is perfect for summertime. It is easy to prepare, very tasty, and most importantly, it does not require baking.

It is necessary

  • - 200 g of cookies;
  • - 100 g butter;
  • - 200 g of dark chocolate;
  • - 400 g of cottage cheese;
  • - 400 g sour cream;
  • - 1 cup of sugar;
  • - 25 g of gelatin;
  • - 2 tbsp. milk;
  • - 200 g of strawberries.

Instructions

Step 1

Grind the cookies until crumbly. Grate 50 grams of chocolate. Then stir in the crushed cookies and chocolate. Prepare a frying pan and melt the butter in it, then pour the melted butter into the dry mixture. Mix all this thoroughly.

Step 2

Then prepare a split mold with a diameter of about 20 cm. If the mold is one-piece, line it with foil. Place the previously prepared cookie mixture into the mold and tamp it.

Step 3

Soak the gelatin for 20 minutes. While the gelatin is soaking, crush the cottage cheese along with the sugar. Pour milk into a separate vessel and place in it 150 g of chocolate, broken into small pieces. Heat this mixture over low heat until the chocolate is melted.

Step 4

Pour the melted chocolate into the cottage cheese, then mix the whole mixture thoroughly in a blender. Then return to the bowl of gelatin. Place it in boiling water and stir until the gelatin is completely dissolved. Leave the bowl in the water.

Step 5

Then beat the sour cream for 5 minutes. Also whisk the cottage cheese and chocolate mixture during the same time. Without turning off the mixer, add gelatin to the curd, then continue beating for another 3-4 minutes. In the resulting mixture, place the previously whipped sour cream and mix everything with a spoon.

Step 6

Put the resulting curd mass on a crust of crushed cookies. Add strawberries. Then knock on the table with the cottage cheese cake mold so that excess air comes out. Place the mold in the refrigerator for at least 3-4 hours. After cooling, remove the sides of the mold and decorate the finished curd cake with strawberries and grated chocolate.
