For the base of such a cake, you can use any cookie, crushed into small crumbs. Instead of strawberries, you can use any seasonal fruits and berries. A delicate and light dessert will appeal to many.
It is necessary
- - strawberries 300 g;
- - gelatin 2 tablespoons;
- - water 200 ml;
- - sugar 3 tablespoons;
- - fat cottage cheese 300 g;
- - cream 20% 150 ml;
- - cocoa powder 2 tsp;
- - butter for lubrication;
- - chocolate, mint for decoration.
Instructions
Step 1
Pour gelatin with cold water and leave for 30 minutes. In a blender, beat the cottage cheese, cream and sugar into a homogeneous mass without lumps. Wash the strawberries, remove the stalks and pat dry.
Step 2
Dissolve the swollen gelatin together with water over low heat, stirring continuously, without bringing to a boil. Then strain the mixture and cool to room temperature. Mix gelatin with curd mass.
Step 3
Separate 1/4 part from the resulting mass into a separate bowl, add cocoa to it and mix thoroughly.
Step 4
Grease the sides of the split form with butter. Pour the mass with cocoa powder into the mold and put in the freezer for 10 minutes. After that, put a part of the strawberries on top of the frozen base, pour the curd mass over it and put it in the refrigerator again until it solidifies.
Step 5
Before serving, place the cake on a platter, garnish with the remaining strawberries, mint leaves and grated chocolate.
