Rinse apples in water, cut in half, peel, hard core and seeds. Cut into cubes about 1-1.5 cm on a side. Put the fruit on a sheet, greased with a very small amount of vegetable oil so that the apples do not stick, and bake for 7-10 minutes in an oven preheated to 180 degrees. Make sure that the cubes do not dry out, remove them earlier if necessary.

Get busy making syrup. Take water and sugar in a 2: 1 ratio. Combine them in a saucepan and cook over medium heat, but do not simmer. The sugar should completely dissolve and the water should evaporate a little. The finished syrup keeps the drop shape well on the plate, and does not spread over it. If the syrup is too thin, add more sugar to it.

Wash the cranberries. Grate lemon or kumquat zest on a fine grater. Place the apple slices in the syrup along with the berries and zest. Cook the jam for at least an hour, the apple pieces should become almost transparent as a result. Stir it constantly. At the end of cooking, you can add a little vanilla or ground cinnamon for flavor.

Additionally, for a rich taste, you can add applesauce to the dessert during cooking. To do this, peel 1-2 apples, grate and add to the syrup 30 minutes before the end of cooking. In this case, you will get something between jam and jam.
