Step 1

First of all, evaluate the raw materials - what kind of apples you will use. If these are light, delicate summer varieties, you do not need to peel off the skin. Cut them into thin slices with a sharp knife, removing only the core. If thick-skinned winter varieties are taken for jam, remove the skin, remove the core, and cut the pulp into cubes.

Fold the sliced apples into a deep saucepan (preferably with a heavy bottom) and cover with sugar. Cover the blank with a towel and leave it overnight (10-12 hours).

Step 2

In the morning, see how much juice has yielded fruit. If the sugar solution is very liquid (this happens when the apples are juicy), pour it into another saucepan and put it on fire. Boil the syrup for 10-15 minutes (until it thickens slightly) and, while boiling, pour back into the apples. Leave to infuse for 2 hours.

Then bring the apples in syrup to a boil and simmer for 5 minutes. After that, turn off the heat, leave the pan with the jam to cool.

Step 3

Meanwhile, rinse the lemons thoroughly and cut in half. Squeeze out the juice, pour it into the jam. Cut the lemon halves in half again and send them to the pot as well.

When the jam is completely cool, put it back on the fire and cook for 3-5 minutes. Repeat this cycle 2-3 times (depending on the apple variety). Pieces of apples in the process of cooking become transparent, acquire an amber hue. As soon as these signs appear, the cooking can be stopped.

Step 4

The finished jam should be thick, bright (lemons add flavor to apples and prevent them from “fading”). Remove unnecessary lemon quarters from it. Put the jam in sterilized jars, cover with lids.
