Jam, jam, marmalade … One and the same, or is it still not?

Jam, jam, marmalade, etc. - dozens of variants of fruit and berry confectionery are known. They all consist of almost the same ingredients, the main of which are the fruits themselves, berries and sugar. However, they are all very different.

All such products are distinguished by their structure and structure into jellies, foams, syrups, purees and candied fruits. The first group includes marmalade, jam, confiture and jelly, the second - marshmallow and marshmallow, the third - jam, and the fourth - jam.

Marmalade is a familiar and beloved delicacy from childhood, it is obtained by boiling thoroughly mashed potatoes with the addition of thickeners.

Pastila is obtained by churning fruit or berry puree with sugar and special foaming additives. According to the method of molding, they are divided into carved and jigging. The former includes, in fact, marshmallow, and the latter is an equally well-known marshmallow.

Jam can be made not only from fruit and berry raw materials. Some vegetables, melons, nuts and even rose petals are also used for its preparation. A feature of this type of product is that the integrity of the fruit is not disturbed during its preparation. You can cook it once or several times at short intervals.

Jam is the closest relative of jam. The main difference is that it is boiled once, but at the same time it is brought to a homogeneous thick mass. It is prepared most often from apples, quince, currants and other berries and fruits with a high content of pectin, which helps to thicken the mass.

A type of jam is confiture, which is a jelly in which chopped and whole fruits boiled in sugar are evenly distributed. Due to the addition of gelling agents, the confiture has a thicker consistency than jam.

Jam is another type of delicacy made from fruit and berry puree. Only slightly boiling the fruits, they are thoroughly rubbed through a sieve. Then it is boiled again. Sugar is added to the jam only at the end.

Jelly is similar to jam, but has a more uniform composition, as it is made from fruit or berry juice (without pulp or seeds).

And finally, candied fruits. This sweet product consists of pieces of fruit or berries cooked in sugar syrup, then extracted and dried.
