Tomatoes cooked in an original marinade will delight you with their extraordinary taste and amazing aroma of spices. And if you choose small cherry tomatoes for canning, your dish will look like a truly royal appetizer, which can be served not only to family members, but put on the festive table for the most demanding gourmets.
It is necessary
- - 1 kg of cherry tomatoes;
- - 200 g of red currant juice;
- - 700 ml of water;
- - 20 g of salt;
- - 35 g of honey;
- - 20 g of tarragon leaves;
- - 20 g of lemon balm leaves.
Instructions
Step 1
Sort tomatoes of the same size, setting aside dented or spoiled fruits for other dishes. Wash them thoroughly under running water. Prick the skins of the tomatoes in several places and store them tightly in a small jar. Add washed lemon balm and tarragon leaves to these.
Step 2
Prepare the marinade. To do this, combine honey, currant juice and salt in a saucepan. Bring everything to a boil and pour over the tomatoes with this marinade. After 5 minutes, pour the solution into the same saucepan and bring to a boil again. Repeat this procedure 2 more times.
Step 3
After the third time, roll up the jar, put it on the lid, wrap it up and leave until the pickled tomatoes have cooled. Then, put the tomato jars in a dark, dry place, such as a basement or closet.
