Tomatoes contain vitamins, minerals and other substances necessary for our body. In addition, they are very rich in organic acids: malic, citric and tartaric. The beneficial properties of tomatoes are best manifested not in raw, but in boiled form. There are quite a few ways to preserve tomatoes at home - these are drying, salting, pickling, soaking, preserving with sugar, freezing. One of the most common is pickling.
It is necessary

- three-liter cans;
- metal covers.
- Contents for one jar:
- tomatoes;
- 2 bay leaves;
- a sprig of celery;
- 3 dill umbrellas;
- 3 cherry leaves;
- 3 black currant leaves;
- 2 cloves of garlic;
- 10 black peppercorns;
- a pinch of mustard seeds;
- horseradish root;
- 1 tbsp. l sugar.
- Brine for one can:
- 1 liter of water;
- 50-60 g of salt;
- 1 tbsp. l 9% vinegar.
Instructions
Step 1
First, put sterilized jars and lids. To do this, use a small pot of boiling water and place a colander on top of it so that it does not touch the water. Place the jar on top of it, neck down, and sterilize for five to seven minutes.
Step 2
Simply place the lids in the same pot of boiling water and remove as needed.
Step 3
Remember the tomatoes should be ripe, firm, but not mushy. Choose the smallest, preferably the same size tomatoes. Then rinse them thoroughly under cold running water, pat dry with a towel and place tightly in jars.
Step 4
To make the tomatoes tasty and aromatic, place between them bay leaves, celery, dill umbrellas, cherry and black currant leaves, slices of garlic cut into small pieces, black peppercorns and mustard seeds.
Step 5
Finely chop the horseradish root, place on top of the tomatoes and close the jars with lids.
Step 6
After that, put a wooden plank or terry towel rolled into two or three layers at the bottom of a large saucepan. Place jars of tomatoes there and pour cold water into the container between them.
Step 7
The water should only reach the shoulders of the jars, if you pour more of it, then when boiling it can get into the jars. Bring the water to a boil and soak the tomato jars in it for five to seven minutes. During this time, they should warm up well.
Step 8
Simultaneously cook the brine in another saucepan. Bring water to a boil, add salt and vinegar.
Step 9
Then carefully remove the jars of tomatoes from the boiling water, pour one tablespoon of sugar into them and top with boiling brine. Roll them up immediately with boiled metal lids, turn them upside down, wrap them up and leave to cool completely.
