Homemade salty baskets filled with cottage cheese, rosemary and cherry tomatoes are a great treat for unexpected guests. A limited number of products and a minimum of preparation time make this dish very convenient.
Ingredients for baskets:
- 450 g flour;
- 1 egg;
- 2 tbsp. l. water;
- 1 pinch of salt.
Ingredients for the filling:
- 15 cherry tomatoes;
- 2 eggs;
- 1 onion;
- 250 g of good cottage cheese;
- 2 tbsp. l. soy sauce;
- 3 tbsp. l. sunflower oil;
- 3 sprigs of fresh rosemary.
Preparation:
- Sift flour for dough into a bowl. Pour water there, drive in an egg and add salt. Knead to a homogeneous elastic dough.
- Put the finished dough on the table, sprinkled with flour, and leave to rest for half an hour.
- Peel the onion, wash, cut into half rings and disassemble by hand into small half rings.
- Pour some oil into a frying pan and heat it up.
- Put the onion in hot oil, fry until golden, season with soy sauce, stir and simmer for another 2-3 minutes.
- Put the cottage cheese in a deep plate and mash with a fork until smooth.
- Drive eggs there, add salt and black pepper. Mix everything with a spoon until smooth.
- Wash all cherry tomatoes and cut in half.
- Knead the rested dough, roll it up and cut into 1 cm thick circles.
- Take basket molds and grease them with oil. Put 1 circle of dough in each mold and distribute it with your hands, giving it the shape of a basket.
- Chop all the dough in tins with a fork and send to the oven for 10 minutes, preheated to 190 degrees.
- Remove the finished baskets from the oven and stuff them with curd mass.
- Put the fried onions on top of the curd mass.
- Place fresh rosemary on the onion and 4 halves of tomatoes on the rosemary.
- Return the formed salted cherry tomatoes to the oven and bake for another 25 minutes until a brown crust forms.
- Remove the ready-made baskets on a dish and serve immediately.
