It seems that there was a special magic in the baking of Soviet times: amazingly tasty things were obtained from the most affordable products! This pastry "from childhood", which tastes like a bakery in the next house, is another confirmation of this.
It is necessary
- Flour - 4 tbsp. + a little more to roll out the dough;
- Dry yeast - 1.5 tsp;
- Egg (room temperature) - 1 pc.;
- Kefir or fermented baked milk (room temperature) - 200 ml;
- Warm water - 150 ml;
- Vanillin on the tip of a knife;
- Sugar - 4 tablespoons;
- Butter (softened) - 65 g + a little to lubricate the top of finished products;
- Salt - 0.25 tsp
- Zest of 1 orange or lemon;
- Favorite jam - 150 g;
- Milk - 100 ml;
- Condensed milk (for pouring) - 4 tablespoons
Instructions
Step 1
Mix yeast with warm milk, 1 tbsp. sugar and 1 tbsp. flour. Leave in a warm place for 15 minutes to bubble up the yeast. This is our brew.
Step 2
Sift 3 cups flour, mix with vanilla and sugar. Add the zest to the dry ingredients. Beat the egg with water and kefir with a whisk, combine with flour, add dough, knead the dough. Add 50 g softened butter and another glass of flour. Knead well and leave on the table under a towel for 20 minutes. Mash for 10 minutes, then transfer to a greased bowl and cover with a towel. Leave on for 1, 5 hours.
Step 3
Lightly grease your hands with oil. Divide the dough into pieces, roll into balls. Leave to rest for another 10 minutes under the plastic wrap.
Step 4
Slightly flatten each ball in the palm of your hand, put the filling - jam in the middle and pinch the edges. Put in a refractory one-piece mold with high sides (the filling will boil).
Step 5
Mix the remaining butter, milk and condensed milk. Heat slightly and pour over the buns. Bake at 180 degrees for about 25 minutes, until browned. Grease the finished pastry with butter, let it stand for a while and take it out of the mold very carefully. Enjoy your tea!
