It is necessary
- - 1 kg of carrots;
- - 300 ml of water;
- - 1 kg of granulated sugar;
- - 3 g vanilla;
- - 1 teaspoon of citric acid.
Instructions
Step 1
Wash the carrots thoroughly, peel, cut into large rings and boil until soft in water. After that, drain the water, and cool the carrots a little.
Step 2
In the meantime, prepare the sugar syrup by boiling water with 800 g of granulated sugar. Pour carrots over them, bring to a boil, reduce heat and cook for 5 minutes. Remove from heat.
Step 3
After 7-8 hours, bring the jam to a boil again, add 200 g of granulated sugar to it and cook until the syrup becomes thick and the carrots are transparent. Add citric acid to the pot a few minutes before the end.
Step 4
When the carrot jam has cooled, add the vanilla and stir. Transfer the jam to screw-top jars and store in the refrigerator.
