Walnuts are a product known for their taste and health benefits. Jam from green walnuts will decorate the table, delight you with an unusual taste and strengthen your health. To make such a jam, you need to take unripe fruits, which do not yet have a shell, and instead a thin green crust. The suitability of the nuts is checked with a toothpick: if it passes through, then jam can be made from such nuts.

- - 100 walnuts of milk ripeness;
- - 2 kg of sugar;
- - water (for syrup) 500 ml;
- - 1 lemon.
Instructions
Step 1
First, peel the nuts from the green crust, cut off the ends of the fruit from the side of the stalk and flower. Wear gloves as the peel contains a large amount of iodine, which can stain hands. Pierce the peeled nuts in several places with a fork or a sharp wooden stick. Place 1 clove bud in each puncture.
Step 2
Fill the nuts with cold, clean water for 10 days, so that bitterness comes out of them. Change the water 2 times a day. If the nuts are very bitter, use lime water. It is prepared as follows: slaked lime in the amount of 500 g is poured into 5 liters of cold water and infused for about 4 hours, then the water is filtered through several layers of gauze or thick cloth. Nuts can be kept in lime water for about a day before soaking in ordinary cold water.
Step 3
Wash the nuts with plenty of water, then put them in boiling water. Simmer for 10-15 over high heat, stirring constantly. Drain the water with a colander, dry the nuts.
Step 4
Boil sugar syrup: mix granulated sugar and 500 ml of water, put in a saucepan over medium heat, bring to a boil, stirring constantly. Skim off the foam and let cool slightly. If you get a lot of nuts, then you need to cook more syrup.
Step 5
Put prepared nuts in sugar syrup. Add spices to taste: cloves, cinnamon, vanillin. Add the juice of one lemon. Put on low heat and cook until thickened, about 2 hours. Then let the jam cool slightly, pour into sterilized jars and roll them up. Store the finished jam in a dark and cool place.
