To make jam, you need to choose only large green nuts without external flaws, having a delicate milky-wax shell. To check the quality, pierce the shell with a toothpick. If it passes freely, the nut can be used to make jam. Ingredients for the delicacy: 100 nuts in the stage of milk ripeness, 2, 25 kg of sugar, 500 g of lime (slaked), 1 tbsp. alum.

A weak aqueous solution of lime is used in the food industry as a means of processing vegetables, fruits, nuts before preparing sweets (jams, candied fruits, candies).

Peel the nuts from the soft shell. Soak them for 2 days in cold water. Change the water three times a day. After that, drain it and puncture the nuts in several places with a fork. Pour 5 liters of slaked lime and leave for 4 hours. Strain the settled water through cheesecloth, which must be folded in several layers. Fill the nuts with lime water, leave for 12 hours. Then drain the solution and soak the nuts in cold water for 2 days. During this time, you need to change the water several times.

Dissolve alum in hot water, pour the resulting liquid over the nuts for half an hour. Drain the solution, and soak the nuts in boiling water for another half hour. Prepare the syrup by using 1 cup sugar per 2 L. water. Pour the prepared nuts with hot syrup and leave to soak for half an hour. Make a basic syrup with 2 kilograms of sugar and 0.5 L of water. Dip nuts in it, cook for 15 minutes. Turn off heat and leave for 12 hours. Repeat this procedure three times. Wash and sterilize the jars, spread the pre-made jam and close the lids.

You can make unripe walnut jam in the following way. Products: 1, 2 kg of sugar, 1 kg of nuts, 1 lemon, 10 pcs. carnation

Prepare your nuts. Boil the syrup from water and sugar, add cloves, lemon juice. Pour in the nuts, cook them for 5 minutes and leave for an hour, then bring to a boil and cook for 5 minutes. Repeat this procedure three times. Cook the jam for the fourth time until tender.

Pour the jam hot into the jars and roll up.

To make jam from unripe walnuts in Armenian you will need: 400 ml of water, 100 pcs. green nuts, 1 kg of sugar, 10 g of cinnamon, 10 pcs. cloves, 2 lemons. Make a syrup, refrigerate it. Add prepared nuts, add lemon juice. Boil and leave for a day. Repeat the process three times, and then cook the jam until the nuts are tender. Spread the jam in sterilized jars, fill with the remaining syrup, close the lids.

To make jam from unripe walnuts in Bulgarian, the following products are needed: 1 kg of nuts, 10 g of citric acid, 1 kg of sugar, 1 tbsp. water. Prepare the nuts, immerse them in 0.5% citric acid solution for 1 hour. Then put them in boiling water for 4 minutes, and then in cold water for 10 minutes. Repeat this procedure 7 times. Boil the syrup from sugar and water, add the nuts and cook until tender. In 10 min. add citric acid before cooking. Pack the jam into jars and roll it up.
