This healthy product can become a component of a much more complex dish, for example, a hearty salad with young potatoes, dainty meatballs with a creamy sauce, an original snack or a delicious dessert.

  • For the salad:
  • - 12 quail eggs + 4 yolks;
  • - 5 young potatoes;
  • - 100 g of spinach;
  • - 20 g fresh tarragon (tarragon);
  • - 110 ml of olive oil;
  • - 3/4 tsp dijon mustard;
  • - a quarter of a lemon;
  • - a pinch of salt and ground black pepper;
  • For scrambled eggs:
  • - 10 quail eggs;
  • - 2 tomatoes;
  • - 1 green bell pepper;
  • - 30 g of green celery;
  • - vegetable oil;
  • - salt;
  • For the meatballs:
  • - 250 g of pork and beef;
  • - 12 boiled quail eggs;
  • - 1 clove of garlic;
  • - 1 chicken egg;
  • - 80 g flour + 40 g for the sauce;
  • - 30 g butter;
  • - 200 ml 2.5-3.5% milk;
  • - 3/4 tsp curry;
  • - 1/2 tsp mixture of peppers;
  • - salt;
  • - vegetable oil;
  • For a snack:
  • - 20 boiled quail eggs;
  • - 20 red cherry tomatoes;
  • - 150 g of thick natural yogurt;
  • - 50 g of mayonnaise;
  • - 1 tsp curry;
  • - salt;
  • For eggnog:
  • - 10 quail eggs;
  • - 300 ml of 2.5% milk;
  • - 100 g of honey;
  • - 1 banana;
  • - a pinch of cinnamon and nutmeg.

Instructions

Step 1

Hearty quail egg salad

Boil the potatoes in their skins, cool, peel and cut into slices. Boil hard-boiled eggs on a nearby burner for 4-5 minutes, cover with ice water, remove from the shell and cut lengthwise into halves.

Step 2

Mash the egg yolks with mustard, salt and pepper. Squeeze the lemon juice into it and whisk the sauce until smooth, pouring in the olive oil. Wash the spinach leaves, pat dry on a paper towel and place on a flat dish. Top with potatoes, eggs, dressing and sprinkle with chopped tarragon.

Diet quail eggs

Cut 1 tomato into cubes. Peel the bell peppers from the seeds and chop the pulp with a knife. Chop the celery thinly. Fry vegetables in a small amount of vegetable oil until soft for 3-5 minutes, then simmer them under a lid over low heat for another 5-7 minutes.

Break the quail eggs into a skillet, lightly salt them and cook until they set. Garnish the scrambled eggs with the leftover tomato slices.

Meatballs with quail eggs

Pass the meat through a meat grinder and mix well with your hands with chicken egg, grated garlic, pepper, curry and salt. Pinch off a little of this mass with your hands soaked in water, mold a cake from it in your palms, put an egg in the middle and stick it with minced meat.

Dip the balls in flour and fry in vegetable oil over medium heat until golden brown. Fry the flour in butter, dilute with milk, stirring constantly, and simmer the sauce to thicken. Pour it into a bowl of meatballs or a gravy boat.

Heat the curry in a dry skillet for a minute, then pour into the yogurt. Mix everything with mayonnaise, stir thoroughly and salt to taste. Refrigerate the sauce for 2 hours.

Step 8

Cut off the tops of the tomatoes and select the soft core with a dessert spoon. Pour a small pinch of salt into the "cups" and place them over the quail eggs. String the mushrooms on skewers or toothpicks and serve with the prepared sauce.

Step 9

Quail eggnog

Beat the eggs and honey with a whisk or mixer. Mash the banana with a fork and add to the egg mixture. Stir in milk. Sprinkle the mogul with nutmeg and cinnamon.
