Grease the bottom of a large saucepan with oil and put on it thinly sliced bacon and veal, then onion rings and processed quail carcasses on top. Pour the wine and broth over the contents of the saucepan. Cover with a lid and simmer over medium heat until tender.

When the quails are soft, place them on the edge of a flat, large dish, with slices of veal and bacon in the center. Pour over the sauce formed during the stewing, sprinkle with chopped parsley and serve.

Quail meat goes well with lingonberry sauce.

Warm quail and egg salad

The salad prepared according to this recipe is served warm. For him you will need:

- 400 grams of quail meat;

- 5 quail eggs;

- 4 cherry tomatoes;

- 500 grams of fresh mushrooms (chanterelles, white);

- 1 onion;

- 1 lemon;

- 200 grams of sour cream;

- 100 grams of white wine;

- 1 teaspoon of butter;

- 50 grams of hard cheese;

- a pinch of white pepper;

- a pinch of nutmeg;

- a pinch of salt;

- a bunch of dill;

- lettuce leaves.

Peel and wash the mushrooms, cut them into small pieces and drizzle with lemon juice. Boil the quail meat, cool, cut into slices and lightly fry in butter.

Mix the mushrooms with finely chopped onions and fry separately from the meat in a little vegetable oil.

Mix the meat with mushrooms and onions, cover with sour cream and cook for 10-15 minutes. Then add white wine, nutmeg, salt, white pepper to the mixture and keep on fire for another 2-3 minutes.

Put the lettuce leaves in a plate, put the warm salad on them, sprinkle it with grated cheese and chopped dill on top. Garnish with half boiled quail eggs and cherry tomatoes.

It takes 3-5 minutes to cook quail eggs, otherwise they will be overcooked and their taste will deteriorate.

Quail egg and ham salad

For this dish you will need:

- 10 quail eggs;

- 2 potatoes;

- 100 grams of ham;

- 2 pickles;

- 1 can of green peas;

- 200 grams of low-fat sour cream;

- dill;

- salt to taste;

- ground pepper to taste.

Boil eggs and potatoes, cool and cut into small cubes. Cut the ham and cucumbers in the same way, mix the ingredients together. Add canned green peas, salt and pepper and season with sour cream. Top the salad with dill sprigs.
