It is necessary

  • To prepare a dough without steam, you will need: 1 glass of warm water (or milk), 20 grams of yeast, about 4 glasses of flour, 1 egg, 4 tablespoons of melted butter or margarine, 4 tablespoons of vegetable oil, half a glass of sugar, 1/4 teaspoon salt.
  • To prepare butter yeast dough, take 2 cups of water (milk), 50 grams of yeast, 4 - 5 cups of flour, 4 - 5 eggs, 1, 5 cups of sugar, 100 grams of butter (margarine), 50 grams of vegetable oil, half a teaspoon salt.

Instructions

Step 1

To make a safe yeast dough, pour one glass of warm water or milk into the prepared dish. Then add the compressed yeast previously dissolved in milk (water). Also add sugar, salt, replace with butter. Knead the dough until it stops sticking to the hands and sides of the dish. Then dust the dough with a little flour, cover with a napkin or towel and place in a warm place that has risen. When the dough increases in volume, it needs to be kneaded a little. If the flour is with weak gluten, then you need to crush it 1 time, if with a good one, then 2-3 times. Holding the dough for too long is also not worth it, because if you overexpose it, it can worsen its taste, products from such a dough will turn out to be tough and sour.

Step 2

To prepare butter yeast (or sponge) dough, you first need to make a dough. To make it, you need flour, water (milk) and yeast. Dissolve yeast in warm milk, add a spoonful of sugar and flour. The consistency of the dough should be similar to liquid sour cream. Then put the dough for an hour and a half in a warm place. You can determine that it is ready when the dough, having reached its maximum height, begins to sink. Add the eggs, grated with sugar, salt, a little warm milk and flour to the finished dough. You need to add enough flour so that the dough sticks off your hands. Then add melted butter or margarine, vegetable oil and knead the dough well again. Place the dough in a warm place for 1, 5 - 2 hours, after this time, knead. The dough is ready.
