Zimushka salad is an excellent dish for the New Year's table. Nutritious ingredients and savory taste will delight guests and households. It can be an excellent substitute for traditional Olivier in the festive menu. There are several delicious and satisfying recipes for this dish - with chicken liver, with beef tongue and mushrooms.

Zimushka salad with chicken liver

To prepare a dish you will need:

- chicken liver - 200 g;

- Korean carrots - 200 g;

- pickled cucumbers - 2 pcs. medium size, - red onion - 1 pc.;

- dill - 1 bunch;

- vegetable oil - 2-3 tbsp. l. (for frying pancakes from liver dough);

- mayonnaise - 2-3 tbsp. l.;

- premium flour - 1 tbsp. l.;

- salt, pepper to taste.

Rinse the chicken liver, put it in a blender or meat grinder and grind into a single bean paste. Add one raw chicken egg to it and beat, flour, salt and knead thoroughly.

Bake the resulting dough like pancakes on both sides in a greased frying pan. Put the finished pancakes in a stack, cool and cut into thin strips.

In a dish, cut red onions into thin half rings (you can pre-scald them with boiling water), pickled cucumbers, Korean carrots and liver into strips. Season all ingredients with mayonnaise, stir and sprinkle with herbs.

The salad must be covered with cling film and refrigerated for 2-3 hours. After that, the dish can be served on the festive table.

Zimushka salad with beef tongue and mushrooms

To prepare this dish you will need:

- mayonnaise - 2 tablespoons;

- fresh cucumbers - 2-3 pcs. medium size;

- pickled mushrooms - 200 g;

- ham or smoked meat - 250 g;

- boiled tongue (can be replaced with boiled beef or veal) - 300 g;

- hard cheese - 150 g;

- garlic - 2 cloves.

Boil the beef tongue, cool. Cut the tongue, ham, cucumbers into thin strips. Pickled mushrooms - cubes. Grate ½ cheese. Mix all the products in a deep dish, cover with mayonnaise, add garlic, passed through a press. Stir.

Put the prepared salad in a deep salad bowl, sprinkle with the remaining grated cheese on top. Decorate with herbs.
