  • - sugar 2 / 3 cups;
  • - salt 1/4 teaspoon;
  • - chicken egg 3 pcs.;
  • - yolk 3 pcs.
  • For the cream:
  • - lemon juice 0.5 cups;
  • - zest of one lemon;
  • - sugar 1 glass;
  • - chicken egg 3 pcs.;
  • - butter 50 g.

Instructions

Step 1

Heat the milk with the butter, making sure to stir. Whisk eggs, yolks and sugar until light foam. In a separate bowl, mix the flour and baking powder thoroughly and sift into beaten eggs, then stir gently. Transfer a few spoons of dough to warm milk and stir. Add the mass to the main dough. Line a baking sheet with parchment, forming the sides. Spread the fairly thin dough in a layer of about 1 cm. Smooth and bake for about 10-15 minutes at 200 degrees until golden brown. Allow the finished roll to cool for a few minutes and roll it up loosely while warm.

Step 2

Preparing the cream. Squeeze 1/2 cup lemon juice with a citrus press or fork. Rub the zest from one lemon. Combine lemon juice, zest, sugar and butter. Bring mixture to a boil and remove from heat. Beat eggs and in a thin stream, stirring constantly, pour into hot lemon juice. Place the container with the mixture on low heat and, stirring constantly, bring to a boil. Cook for a few minutes until thickened. Strain the hot cream through a sieve to remove any lumps and rind. Cool the cream.

Step 3

Unfold the roll and brush with the filling. Wrap it back using paper. Refrigerate for an hour. Sprinkle with powdered sugar before serving.
