Instructions

Step 1

Almonds must be taken raw and peeled beforehand, otherwise the dough will acquire an unpleasant bitter taste. The nuts are scalded with boiling water and allowed to stand for 15 minutes. The peel swells and peels off easily. Peeled almonds should be towel dried and ground in a blender, coffee grinder or mortar.

Step 2

The whites must be separated from the yolks and beat thoroughly with sugar until white peaks form. The air mass is gradually introduced into the nuts, kneading well.

It is recommended to take almond flour. If it is not there, wheat is also suitable.
