Set of products for the dish

You will need:

- pork ribs - 600-800 g;

- potatoes (medium) - 8-10 pcs;

- garlic - 2 cloves;

- soy sauce - 3-4 tablespoons;

- ginger root (grated) - 1 tsp;

- honey - 1 tsp;

- rice vinegar - 2 tablespoons;

- fresh parsley - 1 bunch;

- olive oil, salt, black pepper.

Meat preparation

Defrost pork ribs, if frozen, at room temperature. Then rinse them under running water and pat dry with a paper towel. Cut the meat into portions and place in a deep bowl.

The ribs can be pre-boiled in a small amount of water for 10-15 minutes, and then marinated for a while. Then it will take less time to bake, and the meat will be juicy and soft.

Peel the garlic, crush with the wide side of a knife or the bottom of a glass and chop finely. Peel the ginger root, or rinse well, and grate or finely chop. Combine honey, rice vinegar and soy sauce in a small cup to dissolve the honey. If the honey is heavily candied, preheat it in a water bath or microwave it for a few seconds. Add a pinch of salt, black pepper, a little olive oil to the mixture and stir well. Pour the ready-made marinade over the ribs, stir and leave for at least 30 minutes. Remove any garlic and ginger from the ribs before baking to prevent them from burning during cooking.

Dry red wine can be used in place of soy sauce and rice vinegar. In this case, ginger and honey can be excluded, garlic can be replaced with onions, and bay leaves can be added. A pinch of ground cinnamon will add extra piquancy.

Preparing potatoes

Rinse the potatoes well under running water, peel them and boil them in slightly salted water for 10 minutes. Then drain and cool the potatoes in a saucepan, or place them in a deep bowl. Pour olive oil over the potatoes and shake the pot lightly several times to distribute the oil evenly, or stir gently with a spoon.

If the potatoes are large, cut them into quarters or large strips before boiling. Any vegetable oil can be used instead of olive oil.

Preheat the oven to 220 degrees. Place the pork ribs in the center of a lightly oiled baking sheet and the potatoes around the edges. Bake for 40-60 minutes, periodically checking the readiness of the dish. After 10-15 minutes, reduce the temperature to 180 degrees.

For juiciness of the dish, you can use a coarsely chopped tomato when baking.

Arrange the cooked pork ribs with potatoes in portioned plates or place on one large dish and sprinkle with finely chopped parsley.
