Shchi is a delicious soup that can be prepared at any time of the year from fresh or sauerkraut. To make the traditional Russian soup as tasty and aromatic as possible, you can add dry porcini mushrooms to it.

It is necessary

  • Ingredients for 8-10 persons:
  • - beef shank on the bone - 1, 2-1, 4 kg (2 pieces);
  • - chicken legs - 3-4 pieces;
  • - dry porcini mushrooms - 70 g;
  • - fatty ham - 300 g;
  • - cabbage - a small head of cabbage;
  • - 3 small carrots;
  • - 3 small onions;
  • - parsley root;
  • - garlic - 6-7 cloves;
  • - a bunch of fresh parsley;
  • - black and allspice peas - a teaspoon;
  • - Bay leaf;
  • - salt to taste;
  • - ghee - 2-3 tablespoons (optional);
  • - oil for frying;
  • - sour cream for serving.

Instructions

Step 1

Peel the parsley root and cut it in half, peel the onion, carrot and garlic. Put the meat on a baking sheet, put parsley root, 1 carrot, 1 onion and 3 garlic cloves next to it. Lubricate everything with melted butter and put it under a very hot grill for 15-20 minutes to form a golden brown crust (during this time, turn the meat and all vegetables 1 time).

Step 2

We shift the shank and vegetables into a large saucepan, fill it with cold water for about 4 fingers. Bring to a boil, reduce heat to low and remove foam. Pour mushrooms with a small amount of hot broth, set aside.

Step 3

Tie half a bunch of parsley with a thread, put in a saucepan with peppercorns. Salt to taste and boil the broth with meat and vegetables over the smallest heat for 1, 5 hours. After that, add chicken legs and bay leaf, leave on fire for another 40 minutes.

Step 4

After 40 minutes, remove the pan from the heat, take out the drumstick and chicken, carefully remove the meat from them, and filter the broth.

Step 5

Chop the cabbage as thin as possible, removing the stump. Finely chop the remaining vegetables (onions, carrots and garlic).

Step 6

Heat a small amount of oil in a frying pan, fry the onions, garlic and carrots until soft for 5 minutes. We take out the mushrooms from the broth, put them in a frying pan with vegetables, fry for 5-7 minutes - until the onions are golden brown.

Step 7

We return the pan with the strained broth to the stove, transfer the contents of the pan into it, pour in the broth in which there were mushrooms, add the cabbage and cook for 15-20 minutes - until the cabbage is ready. At this time, cut the ham into strips and chop the remaining parsley.

Step 8

Turn off the fire. Put the shank and chicken meat in the rich cabbage soup, add the ham and parsley, let it brew for 20 minutes. Serve cabbage soup with porcini mushrooms and sour cream.
