Cabbage soup with the addition of dried mushrooms turns out to be light, but nevertheless satisfying. It is useful to include such a soup in your diet - it is not fatty, it contains enough vegetables, it is suitable even for vegetarians.
It is necessary
- - 300 g of white cabbage;
- - 4 potatoes;
- - 1 onion;
- - 1 carrot;
- - a handful of dried porcini mushrooms;
- - bay leaf, pepper, salt.
Instructions
Step 1
Soak dried porcini mushrooms in cool water in the evening. In the morning, strain the water from the mushrooms into a separate container, save it - it will still be useful to us. Cut the mushrooms into slices, put them in boiling water, which is lightly salted. Cook for about 1 hour until tender.
Step 2
Peel the onion, cut into small cubes, peel the carrots too, cut into thin strips or rub on a coarse grater. Fry the vegetables in vegetable oil; the vegetables should turn golden.
Step 3
In a saucepan with mushrooms, send diced or strips of potatoes along with shredded cabbage. After 10 minutes add the fried onions and carrots and cook together for 15 minutes. The cabbage should not be overcooked; it should crunch slightly.
Step 4
Shortly before the end of cooking the soup, add bay leaf to the pan, pour in the saved mushroom infusion. You can add chopped fresh herbs such as parsley, dill, green onions, or basil for flavor.
Step 5
Pour the prepared cabbage soup with mushrooms into plates, season to taste with ground black pepper.
