Peas are among the foods that are recommended for consumption during long Christian fasts, so do not neglect the pea dishes.

Step 1

Prepare the peas for boiling. Before boiling peas, they must be thoroughly rinsed, preferably under running water, until the water becomes clear and transparent. Since peas take a long time to cook, there are several ways to speed them up. The first way is soaking. The washed peas are soaked for 10-12 hours - this is the most optimal period of time for it to swell and absorb the liquid. It is best to soak peas in the evening if you are going to cook porridge during the day. Note that split peas (in halves) will soak faster.

Step 2

Then drain the water in which the peas were soaked, rinse again and now put them to boil. Add cold water to the saucepan so that it not only covers all the peas, but is two fingers higher. Once the water boils, turn down the hotplate to simmer and cook the peas for about 40 minutes.

Step 3

The second way to speed up the cooking of peas is to add oil to the water. If you have butter, then it is better to add it, in this case, the taste of the peas will only become brighter and richer. In case you only have vegetable oil, add it. The taste of the peas will not change much, but it will cook much faster.

Step 4

A third way to cook the peas faster is to gradually add cold water. Put the saucepan on the fire and add a tablespoon of cold water every 8 minutes. This process of sudden temperature changes affects how quickly the peas are cooked.

Step 5

After the peas are cooked (the cooking time will depend on the type of peas and on the time of soaking), turn off the stove, add ground pepper and crush a clove of garlic into a saucepan. This will add flavor to the dish. Remove the garlic from the porridge before serving.
