Perhaps not a single festive table in Russia is complete without red caviar: it is not only extremely tasty, but also very useful. In order to be able to use it for food, fresh caviar is salted, and in addition to salt, preservatives are added to it, allowing it to be stored longer. Lightly salted red caviar, even with preservatives, is a perishable product, so you need to know how to store caviar correctly so that it does not lose its valuable nutritional properties.

Step 1

Of course, if the caviar was bought in a jar weighing a little over 100 grams, then the question of its storage is not raised: most likely, you will eat it on the very first day. Unopened cans with caviar are stored in the refrigerator for a year, but just in case, check the shelf life of the purchased jar indicated on the label, since some manufacturers limit it to six months.

Step 2

If you bought red caviar in a glass jar with a rubberized, tight-fitting lid, then after the caviar is open, you do not need to transfer it anywhere. Leave it in the same jar, it will be stored in it for at least two months, after which, of course, you will have time to eat it. Remember to just close the jar tightly and press the lid latches after each caviar-smeared sandwich.

Step 3

In the event that a large amount of lightly salted caviar is bought by weight, and in the near future you will not eat it, then put it in small glass jars with hermetically sealed lids or in plastic containers. After smoothing the surface of the caviar, pour a little odorless vegetable oil on top of it, preferably olive oil. After that, put the jars in the freezer of the refrigerator, where they can be stored without loss of quality for up to two years.

Step 4

If you plan to eat caviar by weight of good quality, in which there is no liquid from crushed eggs, in the next six months, then put it in sterilized glass jars. Cover its surface with a paper mug dipped in refined vegetable oil so that the caviar does not dry out and place in the coldest place of the refrigerator. Check it periodically for a smell - if it smells like herring, then it should be eaten immediately.
