Step 1
An indispensable component of the financier is toasted butter. Melt 50g butter in a deep skillet and saute over medium-high heat until it smells like nuts. This will take about 4-6 minutes.
Step 2
Grease the baking tins with oil. Preheat the oven to 230 degrees. In a food processor, grind nuts - both hazelnuts and almonds - with powdered sugar. Then add proteins to the mixture and mix. Add melted butter, mix again.
Step 3
We fill our molds with a mixture of 2/3 and send to the oven. Baking time is about 25 minutes, a sign of readiness is a caramel crust. Remove them from the molds while still warm, but be careful - they are very delicate! Bon Appetit!
