Delicate, juicy chop baked under a thick "fur coat" of vegetables, mushrooms, cheese and cream. Try it! This dish is worthy of any festive table.
In this recipe, you can use any meat and thus change the calorie and fat content of the dish. Veal and pork (in the form of steaks), as well as turkey and chicken (boneless breast or thigh fillets) are perfect for cooking.
You will need
- 600 grams of meat;
- 2 medium sized onions;
- 200 grams of cheese (of your choice);
- 2-3 ground tomatoes of medium size;
- 200-250 grams of fresh forest mushrooms or 50 grams of dried;
- 2 tbsp. sour cream (15-20%);
- 3-4 tablespoons of thick creamy yogurt (9%) or natural mayonnaise;
- ground black and / or allspice (to taste);
- any seasoning for meat (of your choice);
- salt (to taste);
- greens (of your choice);
- vegetable oil for frying
The amount of ingredients is shown for 4 servings.
Preparation
Step 1. If you are using dried mushrooms, soak them in water (~ 1.5 L).
Step 2. Wash the meat, remove all excess (bruises, veins, films). Dry with a napkin.
Step 3. Salt, pepper, sprinkle with seasoning (keep in mind that the prepared mixture may contain salt). Rub the meat with your hands.
Step 4. Wrap each piece in plastic wrap and beat lightly. In the same film, put it in the refrigerator for 2-3 hours so that the meat is well saturated with spices.
Remove the meat from the refrigerator 30 minutes before further cooking (so that it warms up to room temperature).
Step 5. Remove the dried mushrooms from the water, rinse. Dry. Filter the water. Just wash fresh mushrooms.
Step 6. Boil the mushrooms. For dried ones, use the water in which they were soaked.
Step 7. Take out the mushrooms and cool. The resulting mushroom broth can be used to prepare other dishes.
Step 8. Peel the onions and chop finely. Fry over low heat until golden brown. Place in a separate bowl.
Step 9. Finely chop the cooled mushrooms and fry for 3-4 minutes in the oil left over from the onions. Finally add sour cream, heat and remove from heat.
Step 10. Remove the film from the meat and fry over low heat until tender. Whether or not to make a golden brown is up to you.
You can cook meat in another way, for example, in a double boiler.
Step 11. Wash greens, dry, chop finely. Grate the cheese on a fine grater, mix with yogurt (or mayonnaise) and herbs.
Step 12. Wash and dry the tomatoes. Cut into slices 3-4 mm thick.
Step 13. Lightly grease the bottom of the glass or ceramic dishes prepared for baking, place the meat steaks. Layer fried onions, mushrooms, tomatoes on top. Pour the yogurt-cheese mixture evenly.
Step 14. Place in an oven preheated to 180 degrees for 15-20 minutes.
Step 15. Remove the dish from the oven and carefully place it on the plates (try not to break the layers). Decorate with herbs. Additionally, you can serve a side dish of rice or potatoes, a salad of fresh cucumbers.
