Ukrainian-style cold beetle is a very tasty, appetizing and light dish, which in its essence is a cold soup. It is very easy to learn how to cook it.
It is necessary
- 3 medium beets;
- 2 chicken eggs;
- 1 bunch of fresh dill;
- half a bunch of cilantro greens;
- mustard;
- salt;
- 3 potato tubers;
- 3 fresh cucumbers;
- 1 bunch of green onions;
- 1 lemon;
- 250-300 g of lean sausage;
- 3 liters of clean water.
Instructions
Step 1
Beets should be thoroughly rinsed and peeled. After that, it is cut into not very large cubes and put into a saucepan. Water is poured there and squeezed juice from one lemon. And then the pan is sent to a hot stove. Cook the beets until cooked through (about 90 minutes).
Step 2
Place the eggs in a small saucepan, add water and put on the fire to boil. For the eggs to be hard boiled, they must boil for about 8-10 minutes. Then they are taken out into a cup and filled with cold water. The cooled eggs should be peeled and cut into small cubes.
Step 3
Potato tubers should also be boiled until fully cooked, after having thoroughly washed them. After they have cooled, they are peeled and cut into small cubes. Wash the cucumbers well, cut the stalks and cut them into small pieces using a sharp knife.
Step 4
Rinse fresh herbs and let the water drain. Then chop it finely using a sharp knife. The sausage also needs to be cut into cubes.
Step 5
Combine all chopped ingredients in a deep bowl and mix thoroughly. After that, add the required amount of mustard and mix everything again.
Step 6
Then pour the cooled water in which the beets were cooked into the cup, and also put the chopped and boiled root vegetable itself. We also pour the previously chopped ingredients there. After mixing thoroughly, you need to salt the dish, and also, if necessary, add more lemon juice and mustard.
Step 7
Refrigerate the soup until it cools completely. Then it can be poured into plates and served. This dish is especially important on hot summer days.
