Cabbage is a very healthy product. It contains almost the entire set of vitamins necessary for normal human life (vitamins B1, B2, B3, B6, K, C, provitamin A, antiulcer vitamin U). It is consumed both fresh and boiled, stewed and fried. The only drawback of cabbage is the difficulty in storing it. In the refrigerator, it withers, then rots. But, of course, you can save the cabbage.

It is necessary

  • • cling film
  • • Plastic bags
  • • Paper
  • • Utensils for blanching
  • • Water

Instructions

Step 1

The most acceptable temperature for storing any kind of cabbage is 0–1 ° С. In modern refrigerators, a freshness zone is provided, which has exactly this temperature regime. If your refrigerator does not have such an area, then a section for storing vegetables is also suitable. But in this case, the temperature in the refrigerator itself should be set to the lowest possible level.

Step 2

If we are talking about white or red cabbage, then it must be wrapped with cling film before putting it in the refrigerator. It is imperative that the film adheres well to the head of cabbage and does not leave a void between them. With this method of storing the cut head of cabbage, the cling film must be periodically changed as condensation accumulates on it.

Step 3

The long-term preservation of whole heads of cabbage can be ensured in another way. For example, wrap cabbage in paper, then place it in a plastic bag, after making several holes in it. Such heads of cabbage must be stored in the refrigerator, periodically changing the paper, which absorbs moisture from the vegetable.

Step 4

A similar method works for the preservation of broccoli and cauliflower. The only caveat here is that in the first 2-3 weeks the cabbage is stored along with the leaves, and then they must be torn off.

Step 5

But the best way to store cauliflower and broccoli is to freeze it. To do this, rinse the cabbage, boil a little in water (3-5 minutes), then cool and disassemble into inflorescences. After that, the vegetable must be dried, put in plastic bags and placed in the freezer. You can preserve Brussels sprouts in the same way.

Step 6

In principle, you can also freeze white cabbage, but in the future such cabbage will be completely unsuitable for salads. It is only suitable for cooking, stewing and frying. The process of freezing it is exactly the same as for broccoli with cauliflower, but it should be chopped first.
