Instructions

Step 1

Prepare jars for the blank in advance. Sterilize them over steam for 5 minutes. It is advisable to preserve peas in half-liter jars, since in the open form it deteriorates very quickly even in the refrigerator. Boil the lids in a soda solution (for 2 liters of water 4-5 tsp. Soda) for about 3 minutes.

Step 2

Peel fresh young pods of "milky" peas and sort through the grains. For canning, only peas are suitable without damage and dark spots with a hard green skin. Rinse the beans thoroughly under cold running water.

Step 3

Prepare brine at the rate of 250 ml of liquid for a half liter jar. Pour water into a saucepan, add sugar and salt and bring the marinade to a boil. Pour green peas into the water and blanch in boiling water for no more than 5 minutes. Place the peas in a saucepan in small portions, about 1 can and make sure that the grains are not overcooked, remain beautiful and strong. If, nevertheless, the peas burst, throw them out of the pan, otherwise they will make the transparent brine cloudy.

Step 4

Put the boiled peas in sterilized jars using a slotted spoon, cover with lids. Strain the brine through 3-4 layers of cheesecloth. Add a few crystals of citric acid to it and simmer over low heat for a couple of minutes.

Step 5

Pour the boiling brine over the pea jars. To prevent the jars from bursting, gently direct the stream of marinade to the center. Add 1 tsp to each jar. acetic acid. Place a tea towel at the bottom of a wide saucepan, pour in water and place jars of peas, covering them with lids. Bring the water to a boil and sterilize the canned peas for 30-40 minutes. And then roll up tightly with metal caps. Wrap the jars with a towel or blanket and leave to cool completely. Store canned peas in a cool place for no more than 1 year.
