Step 1

Mash the butter and sugar until it turns white and the sugar grains dissolve. For the butter to whisk well, it should be at room temperature. Add eggs to the butter one at a time, stirring the mixture thoroughly. Add sour cream and baking powder and stir again.

Step 2

Sift flour through a sieve. Start adding it to the dough little by little, without ceasing to stir. The dough should be soft and elastic, but not runny. Roll the dough into a ball, cover with a towel and let stand for half an hour.

Prepare the filling. Separate the whites from the yolks. Set aside the yolks in a separate bowl. Beat the whites with a whisk or using a mixer until firm, white foam.

Rub the curd through a sieve to remove any lumps. Add yolks and sugar to the curd and mix thoroughly until smooth. Add a little sour cream to the curd mixture. Then gently and little by little add the whipped egg whites to the mass. To prevent the mass from losing volume, stir it from top to bottom. As a result, the filling should be very light and airy.

Step 5

Roll out the dough into a sausage. Cut the sausage into small equal pieces. Sprinkle each piece with a small amount of flour and roll it into a cake with a rolling pin. The tortillas should not be very thin, about 10-12 cm thick.

Step 6

Place the curd filling on half of the flatbread and cover it with the other half of the flatbread. Press down slightly with your hand, pinch the edges, and leave the middle slightly open.

Step 7

Whisk the yolks you set aside with water. Brush with this mixture. Grease a baking sheet or baking dish and add the juices. Preheat the oven to 180 degrees and place a baking sheet with juices. Bake for 20-25 minutes.
