  • - 300 g of chicken offal (liver, stomachs);
  • - 2 potatoes;

  • - mayonnaise;

  • - ground black pepper;

  • For cheese soup:
  • - 10 quail eggs;
  • - 100 g of Frico Edam cheese;
  • - 750 ml of chicken broth;
  • - 4 tbsp. l. cream;
  • - 2 tbsp. l. gin;
  • - chives;
  • - grated nutmeg;
  • - ground black pepper;
  • - salt.
  • For the quail egg meatloaf:
  • - 500 g of beef fillet;
  • - 150 g of boiled mushrooms;
  • - 6-8 quail eggs;
  • - 2-3 cloves of garlic;
  • - 2-3 tbsp. l. tomato paste;
  • - vegetable oil;
  • - ground black pepper;
  • - salt.

Instructions

Step 1

Chicken in a basket salad

Thoroughly rinse and dry chicken offal: liver, stomachs, hearts. Then boil in salted water until tender, cool and cut into small pieces. Wash and boil vegetables (potatoes and carrots) separately. Then, after peeling the skin, cut the potatoes into small cubes, and grate the carrots on a coarse grater. Chop pickled cucumbers together with washed and dried dill or parsley. Hard boil the quail eggs. This will take 5-6 minutes. Then cool the eggs in cold water, peel and carefully separate the yolks from the whites. Set aside the yolks, and finely chop the whites and combine with the rest of the prepared ingredients. Season with salt, pepper, season with mayonnaise and mix well. Rinse the colored bell peppers, pat dry on a paper towel, cut in half and remove the seeds. Then spread the prepared salad in the prepared pepper halves and decorate with quail yolks, which, if desired, can be grated beforehand.

Hard boil 3 quail eggs, cool, peel and set aside. Mix the rest (raw) eggs with cream, grated cheese and nutmeg. Bring the pre-cooked chicken broth to a boil, then remove from the stove, pour in the cooked egg-cream mixture and beat everything with a whisk. Add gin and finely chopped chives. Season with salt and pepper. Pour into bowls and garnish with half boiled quail eggs.

Meatloaf with quail eggs

Wash the meat, dry it, cut it, forming a layer about 1.5-2 centimeters thick, and beat it lightly with a wooden mallet. Season with salt and pepper. Finely chop the boiled mushrooms, peel and chop the garlic with a knife or pass through a press. Hard-boiled quail eggs, cool in cold water and peel. Put chopped mushrooms mixed with chopped garlic and whole boiled quail eggs on the meat layer. Gently roll the stuffed meat into a roll and pull tightly with twine. Place the roll in a greased rooster or stewpan, spread the meat on top with tomato paste and place in a preheated oven for an hour and a half to bake at 180 ° C. Carefully remove the twine before serving the meatloaf on the table.
