How to make a strawberry and cottage cheese cake

You will need:

- 200 g flour (100 g wheat and 100 g corn);

- 80 g fresh butter;

- 4 tbsp. tablespoons of granulated sugar;

- 1 egg;

- 1/3 teaspoon of fine salt;

- 1 tsp baking powder;

For filling:

- 500 g of cottage cheese;

- 1 glass of cream with 35% fat;

- 600-700 g of strawberries;

- 100 g of sugar (or powdered sugar);

- 1 bag of vanillin;

- 20 g of gelatin.

Prepare shortbread dough: grind softened butter with sugar until white, mix sifted flour with baking powder, add one egg and salt to it. Knead the dough and place it in the freezer to cool for 25-30 minutes.

Lubricate the mold with butter (for baking use either a snap-off mold or a silicone mold), roll out the dough and place it in the mold. Bake for 15 minutes at 190-200 degrees. After the time has elapsed, remove the cake from the oven, place it on a tray and let cool.

Soak the gelatin in warm water. Grind cottage cheese with sugar and vanilla. Rinse the strawberries, make mashed potatoes from 300 grams. Mix the strawberry puree with the curd mixture.

Heat the gelatin, stir it well, make sure that it is completely dissolved in water. Chill the cream, whip it and combine with the curd-strawberry mass and gelatin. Mix everything thoroughly and refrigerate for one hour.

Cut the remaining strawberries into slices. Put the cake on a flat dish, put the curd-strawberry mass on top of it. Decorate the cake with strawberry wedges.

You will need:

- 300 g of strawberries;

- 200 g of sugar;

- 250 g flour;

- 1 bag of vanillin;

- 4 eggs;

- 250 ml heavy cream;

- 1/3 teaspoon of salt;

- 1 teaspoon lemon zest.

Rinse the strawberries and cut them into quarters. Put strawberries, sugar (100 g), lemon zest and vanillin in a saucepan. Put on low heat for 10-15 minutes.

Separate the yolks from the proteins. Mash the yolks with sugar, and beat the whites with salt until fluffy. Mix the yolks, whites and flour gently. As a result, you should get a dough of medium density.

Grease a baking sheet with oil, put the dough in it and place in the oven for 25-30 minutes. Bake the biscuit at 180-190 degrees.

Divide the strawberry mass into two equal parts. Whisk in the cream and mix with one part of the strawberry mixture.

Cut the finished biscuit in two. Lubricate the bottom with a creamy strawberry mass, the top just with strawberry. The strawberry cake is ready.
