It is necessary
-
- For the test:
- 500 g flour;
- 1 egg;
- 4 tbsp. l powdered sugar;
- 350 g butter;
- 4 tbsp. l of water.
- For the cream:
- 6 egg yolks;
- 150 g sugar;
- 50 g flour;
- a pinch of salt;
- 2 cups milk;
- vanilla pod;
- a bunch of basil.
Instructions
Step 1
Sift the flour through a sieve two or three times and place it in a slide on the table. Make a small "well" in the middle, add a broken egg, icing sugar, butter and ice water. Place a bottle of mineral water in the freezer first.
Step 2
Then combine all the ingredients, mix well, and immediately knead the dough. When it becomes smooth and soft, roll it into a ball, wrap it in plastic wrap and refrigerate for twenty to thirty minutes.
Step 3
After the time has elapsed, take out the chilled dough, roll out on a floured surface. Place it in a greased dish, cover with baking paper, and lightly press down on top. Use beans, beans or special stones as oppression.
Step 4
Then place the mold in an oven preheated to 220 degrees. Bake the crust for fifteen to twenty minutes until golden brown. Then carefully remove it and let it cool on a wire rack.
Step 5
Prepare the cream at this time. Separate the yolks from the whites, mix them with the sugar and beat well. Mix the flour with salt, gradually pour it into the yolks, stirring constantly.
Step 6
Put a vanilla pod in the milk, bring to a boil, turn off, let stand for ten minutes. Then pour the milk into the yolks in a thin stream, whisking continuously.
Step 7
Pour the cream into a deep saucepan, and stirring vigorously, bring to a boil over medium heat. Reduce heat, simmer for a couple of minutes. Then strain it through a fine sieve and set to cool.
Step 8
At the very end, add basil leaves cut into thin strips into the cooling, but still hot enough cream. Be sure to stir it periodically to avoid skin formation.
Step 9
Apply cream on the cooled crust, lay the berries tightly. Cut off their ponytails so that they can be conveniently placed vertically. Bon Appetit!
