Zucchini with hazelnut and garlic dressing

With just a few ingredients, you can make a delicious dish - zucchini with a nut and garlic dressing. To do this, you will need:

- zucchini - 1 kg;

- walnuts - 0.5 tbsp.;

- parsley to taste;

- garlic - 2-3 pcs.;

- vegetable oil - 2-3 tbsp.

First, rinse the zucchini thoroughly, peel it and cut it into fairly large pieces with a sharp knife. Pour 2 tablespoons into a preheated pan. vegetable oil. When the oil is hot, place the zucchini in a skillet and sauté over high heat.

While the zucchini is roasting, prepare the dressing: first rinse the parsley thoroughly and peel two cloves of garlic. Chop everything finely and add walnuts, crushed with a rolling pin. Season the mixture with vegetable oil and mix thoroughly. Add the resulting dressing to the zucchini, stir gently and sauté for a couple of minutes. The finished dish can be served both hot and cold.

Zucchini cutlets

Fans of meat dishes can cook cutlets with zucchini. Need to take:

- meat - 0.5 kg;

- tomato - 2 pcs.;

- zucchini - 200 g;

- onions - 2 pcs.;

- red bell pepper - 2 pcs.;

- garlic - 2 pcs.;

- hard cheese - 100 g;

- vegetable oil - 2 tablespoons;

- ketchup and mayonnaise - to taste;

- parsley to taste;

- dill greens - to taste;

- salt - to taste;

- pepper - to taste.

First, rotate the meat in a meat grinder along with one onion, courgettes and garlic. Add the egg, mix the minced meat thoroughly and add salt and pepper to taste. Mix the minced meat well, beat off a little and divide into small portions - blanks for cutlets. Then take an onion, peel and cut into thin slices. Also, cut the tomatoes into circles. Grate hard cheese on a coarse grater.

Now take the bell pepper, wash thoroughly and pat dry. Cut into rings about 1 cm wide, remembering to remove seeds and "baffles".

Line a baking sheet with baking paper and lightly grease with oil. Place the bell pepper rings on the parchment. Fill the rings with the cooked minced meat, brush with a little ketchup on top and lay the onion rings. Lightly grease the onion with mayonnaise and cover with tomato circles.

Cover the dish with grated cheese and place the baking sheet in the oven. Bake at 180 ° C for about 40-50 minutes. Serve these baked patties hot, sprinkled with fresh herbs.

Zucchini blanks

It is very convenient to harvest zucchini for the winter in the form of a vegetable salad. To do this, take:

- zucchini - 3 kg;

- carrots - 1.5 kg;

- vegetable oil - 1 tbsp.;

- salt - 3 tablespoons;

- sugar - 5 tablespoons;

- black pepper - 1 tablespoon;

- table vinegar 6% - 3 tbsp.

Rinse the courgettes first and cut them into large cubes. Then grate the peeled carrots on a coarse grater. Peel the onion, rinse and cut into small cubes.

Take a large enamel pot or cauldron, pour in a glass of vegetable oil. When the oil is hot, place the onion in a saucepan and simmer for about 10 minutes. Then add the carrots and simmer for another 10 minutes. Pour the zucchini into a saucepan and, stirring thoroughly, cook the vegetables for another 15 minutes.

Add salt, sugar and vinegar, mix everything thoroughly. Then cover the saucepan or cauldron with a lid, reduce heat and simmer for about an hour and a half. Add pepper last. When the salad is ready, remove it from the heat and place it in sterilized jars, roll it up, turn the lids down and wrap it with a cloth until it cools completely.
