    • For yeast dough:

    • 3 tbsp. flour
    • 100 g butter or margarine
    • 250 ml of kefir
    • 0.5 tsp salt
    • 1 tsp baking powder or baking powder.
    • For dumplings dough:
    • 3 tbsp. flour
    • 1 egg
    • 2/3 st. water
    • 0.5 tsp salt.
    • For the pizza dough:
    • 2 tsp dry yeast (saf - levure yeast works well)
    • 350-400 g of flour (175-200 g each of white wheat flour and durum)
    • 250 ml warm water
    • 1 tbsp olive oil
    • 1 pinch of salt.
    • For shortcrust pastry:
    • 3 tbsp. flour
    • 3 eggs
    • 400 g butter or margarine
    • 2/3 st. Sahara
    • soda on the tip of a knife
    • 1 tsp lemon juice.

Step 1

Make a leavened dough. To make the dough, combine 0.5 tbsp in a large bowl. milk, 0.5 tbsp. flour, sifted through a sieve, 0.5 tbsp. sugar and yeast. Mash the mixture thoroughly and place in a warm place for an hour. The dough should double. The remaining 0.5 tbsp. Heat a little milk over medium heat, add butter and salt. Beat everything with a whisk and pour into the dough. Take the eggs and separate the yolks from the whites. Mash the yolks with the remaining sugar, beat the whites until a fluffy foam forms. Add everything to the dough. Sift the remaining flour there, mix everything. Put the dough on a floured table and knead, periodically sprinkling with flour until the dough stops sticking, about 15-20 minutes. Cover the dough with cling film and put in a warm place for 2 hours. The dough should double in size. Before you start working with the test, wrinkle it.

Step 2

Make a yeast-free dough. It turns out to be not as lush as yeast, but it is easier to cook and lower in calorie content. Grind the flour with butter or margarine (preferably in a food processor). Pour in kefir, add salt, baking powder or baking powder and knead into an elastic, soft dough. Roll the dough into a ball and refrigerate for an hour.

Step 3

Make dough for dumplings or dumplings. To do this, sift the flour on the table with a slide, make a depression in its top. Beat in an egg, pour in warm water, add salt and knead a hard dough. Cover the dough with a napkin and let it rest for 40 minutes.

Step 4

Make pizza dough. In order to make a classic dough, you need 2 types of flour - regular white wheat flour and durum flour. This is the name of the flour of the second grade from durum wheat, GOST 16439-70. Mix both types of flour, pour the mixture into a bowl with a slide and make a depression in the middle. Pour the yeast with warm water from the total mass, about 25 ml. Let them come up and pour into the well.

Pour in the remaining water, add olive oil, add salt, and knead the dough with your hands. Place it on a floured table and knead for about five minutes. Then put it back in the bowl, cover with a towel and let stand for 30 minutes. The dough should rise 2 times.

Step 5

To make another of the main types of dough, sweet shortbread, soften butter or margarine, grind with eggs and sugar. Pour in the flour mixed with soda and salt slaked with lemon juice. Knead the dough and refrigerate for 1-2 hours.
